Salamis are the most popular item on most charcuterie trays. Making a great salami entails both science and art - it is not necessarily difficult, but there a lot to learn. In this instructional course, you'll see a demonstration of the three primary steps in salami making: Grinding, curing, and drying. You'll also get hand outs capturing essential details. Completion of this course is a requirement to being invited back to our DIY Kitchen to prepare your own salami, a process that spreads the three primary steps over several weeks. Since this course is a prerequisite to being invited to use our facilities for making your own salami, it is a good course to attend with friends so the everyone can later participate in the hands-on fun of applying what you'll have learned in this course. After the instructional part of the afternoon, we'll wrap up with a sampler of various salamis, enjoyed alongside an adult beverage.
